Chocolate Tsoureki

INGREDIENTS
- 1,000 gr. Tsoureki Mix Choco
- 380 gr. - 390 gr. water
- 80 gr. yeast
- Egg or Brilliant Mix for glazing
METHOD
- Incorporate all the ingredients together
- Incorporate for 30 minutes in a traditional dough mixer or 18 minutes (3 minutes on the 1st speed and 12 minutes on the 2nd speed) of the high-speed dough mixer
- Allow the dough to rest in a warm place for 30 minutes until it doubles in size
- Shape the dough as desired
- Ferment for 45 minutes at 40°C and 75 % RH
- Glaze with egg or Brilliant Mix
- Bake at 160°C in a rotating oven for 25 – 35 minutes or in a modular oven at a temperature than is 55°C lower that the bread baking temperature for 30 – 40 minutes
